Overview
ART-BK-032 is an industrial bread improver designed for flour-based yeast-leavened dough systems where crumb structure, dough tolerance, and production consistency are procurement priorities. It is typically used alongside instant dry yeast, compressed yeast, or liquid yeast in pan bread, sandwich bread, buns, rolls, toast bread, and high-throughput line baking. For adjacent yeast and bakery inputs, see our baking yeast category.
The formulation is supplied as a free-flowing cream to off-white powder. Typical technical targets may include moisture not more than 10%, fine powder passing 40 mesh, and a recommended use level of 0.3% to 1.0% on flour weight, subject to flour strength, mixing energy, fermentation time, and desired crumb profile. Functional systems may include flour or starch carrier, emulsifier, oxidizing support, mineral salts, and bakery enzyme preparations, with the final declaration confirmed on the product specification sheet. This is not a live yeast product and has no CFU/g claim unless separately specified for a custom blend.
Applications
- Industrial bread plants: supports dough stability during spiral mixing, divider rounding, sheeting, moulding, proofing, and tunnel-oven baking where line interruptions can affect loaf shape and crumb grain.
- Artisan and commissary bakeries: helps standardize flour variability across daily production of white bread, wheat bread, soft rolls, burger buns, and packaged loaves.
- Frozen or retarded dough programs: suitable for evaluation in systems requiring improved gas retention and handling after chilled storage, with dosage adjusted through pilot trials.
- R&D formulation work: useful for flour correction trials, yeast dosage optimization, crumb softness benchmarking, and shelf-life texture studies based on internal sensory and texture methods.
- Procurement programs: supplied in 25 kg sacks for palletized bulk buying, private-label bakery manufacturing, and multi-site specification alignment. Submit specifications through request a quote for a bulk quote on request.
Storage and Handling
Store sealed sacks in a clean, dry, ventilated warehouse at 5–25 °C, away from direct sunlight, high humidity, strong odors, and chemical materials. Reseal partly used bags promptly to limit moisture pickup and powder caking. Typical shelf life is 12 months from manufacture when stored in unopened original packaging under recommended conditions, although the confirmed period will be listed on the lot CoA or product label. Add the improver with flour or other dry ingredients for even dispersion before water addition. Plant trials should verify absorption, mixing time, final dough temperature, proof height, and baked crumb against the bakery’s baseline formula.
Quality and Documentation
ART-BK-032 is supplied for food manufacturing use with lot traceability and specification-controlled release. Typical documentation available on request may include Certificate of Analysis, product specification, allergen statement, food-grade declaration, GMO status statement where applicable, and safety data information for handling. HACCP-aligned manufacturing information and food-safety certification documentation such as ISO 22000, FSSC 22000, Halal, or Kosher may be provided when available for the relevant production site and lot. Review our documentation approach at quality and compliance. Buyers should confirm country-specific ingredient declaration, additive status, and labeling requirements before commercial launch.
Storage & Handling
