Overview

ART-BK-010 instant dry yeast is formulated for industrial bread lines that require consistent gas production, rapid dispersion, and simplified dosing. Unlike compressed yeast or active dry yeast systems that may require separate rehydration or a pre-fermentation step, this IDY format can be metered directly into dough mixing, subject to the customer’s recipe, water temperature, and process validation. It is suitable for straight dough, sponge and dough, continuous mixing, and frozen or chilled dough workflows when evaluated against local process conditions.

Typical specification targets include live yeast count of approximately 1.0×10^10 CFU/g or higher, moisture not more than 5.5%, tan to light brown granules, low foreign odor, and granulation generally in the 0.3–1.2 mm range for free-flowing dosing. Protein is commonly in the 40–50% range on a dry basis, reflecting the yeast biomass composition. Formulations may include a small quantity of processing aid such as sorbitan monostearate, depending on destination regulations and agreed specification. Storage and Handling

Store unopened sacks in a cool, dry, odor-free warehouse, ideally below 25°C and away from steam lines, direct sunlight, and high humidity. Keep packaging sealed until use; after opening, close the sack tightly or transfer to a clean dry container and use promptly according to site GMP procedures. During production, avoid direct contact between dry yeast and concentrated salt, oxidizing improvers, or very hot water. Many industrial bakeries add IDY with flour or disperse it in part of the mixing water below approximately 40°C, but the validated plant method should govern. Dosing rates are formula-dependent; common ranges may run from 0.3% to 1.5% on flour weight, with higher levels used for short fermentation, sweet dough, cold dough, or rapid proofing systems.
