Overview
ART-BK-002 instant dry yeast is produced from selected baker’s yeast strains and dried into small, porous granules that disperse rapidly in dough. Unlike compressed yeast, it has a much lower moisture content, typically not more than 5.5%, supporting longer ambient shelf life and easier inventory planning. The product is intended for direct mixing with flour or dry ingredients; rehydration is normally not required when adequate dough water and mixing time are provided.
Typical specification targets include viable yeast activity suitable for high-speed bakery lines, protein approximately 40% on dry basis, beige to light-brown granules, clean fermented yeast aroma, and foreign matter control by production screening. Recommended use level is commonly 0.3% to 1.5% of flour weight, adjusted for sugar, fat, salt, proofing time, dough temperature and flour strength. Applications

Storage and Handling
Store unopened sacks in a cool, dry, odor-free warehouse, ideally below 25°C and away from direct sunlight, steam lines, cleaning chemicals and high-humidity zones. Keep packaging sealed until use; after opening, roll and close the liner tightly, minimize air exposure, and use the remaining yeast promptly according to site procedures. Typical unopened shelf life is up to 24 months when stored under recommended conditions, subject to the certificate of analysis for the supplied lot.
For best performance, add instant dry yeast with flour or other dry ingredients, avoiding direct contact with concentrated salt, sugar syrups, oxidants or very cold water before dilution in dough. Confirm mixing order and water temperature during plant trials.
Quality and Documentation
ART-BK-002 is supplied for food manufacturing use with lot traceability and routine release testing. Standard documentation available on request may include certificate of analysis, specification sheet, allergen statement, food-grade declaration, GMO-status statement where applicable, packing list, safety data information and country-of-origin documents. Food-safety system documentation such as HACCP, ISO 22000, FSSC 22000, Halal or Kosher status can be provided when available for the production lot or manufacturing site.
