Overview
ART-EN-013 pectinase is a dry industrial enzyme blend designed for processing fruits, vegetables, cereal-adjacent materials, and other pectin-containing substrates. The active enzyme system typically includes pectin-depolymerizing activities such as polygalacturonase, pectin lyase, and related side activities, depending on the production lot and application target. By cleaving pectin structures in cell walls and middle lamella, the enzyme can reduce mash viscosity, increase liquid release, improve clarification performance, and support more predictable downstream separation.
The product is supplied as a free-flowing beige to light-brown powder in a 25 kg multi-wall sack. Typical commercial specifications may include moisture not more than 8%, activity declared in U/g on the certificate of analysis, and particle size suitable for dry dosing or pre-dispersion in process water; final specifications are confirmed by lot. It is not a live yeast ingredient, so CFU/g potency specifications used for active dry yeast do not apply. Storage and Handling
Store ART-EN-013 in the original sealed 25 kg sack in a cool, dry, well-ventilated warehouse, away from direct sunlight, condensation, strong odors, and alkaline chemicals. Recommended storage is below 25 °C with relative humidity controlled where possible. Under unopened, dry storage, typical shelf life is 12 to 18 months, subject to the lot label and activity-retention data. After opening, reseal promptly and use a first-in, first-out inventory system.
For dosing, pre-blend into dry carriers or disperse in clean process water before addition to the substrate. Avoid dust generation and use appropriate plant PPE for enzyme powders, including eye protection and respiratory controls where local risk assessment requires them. Excessive heat, high pH, and prolonged exposure to moisture can reduce activity.
