ART-BW-032 is a high-alcohol-tolerance distillation yeast formulated for neutral spirit production. The strain is designed to ferment efficiently in well-prepared mashes up to approximately 17% ABV under appropriate nutrient, temperature, pH, and solids-control conditions. It is suitable for producers targeting a clean base alcohol for vodka, gin, liqueur alcohol, rectified spirit, and neutral grain spirit, where fermentation reliability and low sensory carryover are procurement priorities.
Typical specification targets include active dry yeast format, moisture not more than 8%, viable count commonly not less than 1.0×10^10 CFU/g at packing, and tan to light-brown granules with characteristic yeast odor. Recommended fermentation conditions are generally 28-34°C, pH 4.0-5.5, and a pitch rate of 0.3-0.8 g/L depending on gravity, substrate, and process risk. Storage and Handling
Store unopened 10 kg foil pouches in a cool, dry, odor-free warehouse, ideally below 25°C and away from direct sunlight, steam lines, oxidizing materials, and high humidity. Under recommended storage conditions, typical shelf life is 24 months from manufacture, subject to lot confirmation on the certificate of analysis. Once opened, reseal tightly or transfer to a clean, dry, food-grade container and use promptly to limit moisture uptake and viability loss.
For rehydration, disperse the yeast into clean water at 35-38°C at approximately 5-10 times its weight, hold for 15-25 minutes, then acclimate gradually with mash to reduce thermal and osmotic shock. Do not mix dry yeast directly with concentrated sanitizers, acids, or undiluted nutrients.
