Overview
ART-BW-039 is a blended fermentation nutrient formulated around diammonium phosphate (DAP) and complex yeast assimilable nitrogen sources. It is intended for controlled supplementation of grape must, fruit wine bases, sugar washes, high-gravity worts, and distilling mashes where naturally available nitrogen may be insufficient for predictable yeast metabolism. The product is not a live yeast and carries no CFU claim; it is used alongside a selected production yeast strain and an approved cellar or brewhouse nutrient protocol.
The blend supplies ammonium nitrogen from DAP together with amino-nitrogen and growth factors contributed by yeast-derived material. Typical physical targets include free-flowing off-white to light tan powder or granules, moisture not more than 8%, pH of a 1% solution approximately 6.5–8.5, and 20–80 mesh particle distribution for rapid dispersion. Nitrogen contribution is confirmed by lot-specific CoA, allowing R&D and production teams to calculate additions against target YAN values. For related fermentation inputs, see the brewing and winemaking yeast category.
Applications
- Winemaking: supports nutrient correction in grape must, fruit wine, cider, mead, and high-Brix fermentations. It is commonly used in staged additions after must analysis, particularly where low native YAN, high sugar, or extended fermentation time increases process risk.
- Craft brewing: used in selected high-gravity beer, seltzer base, and adjunct-heavy wort fermentations where wort nitrogen profile differs from standard all-malt brewing. Bench trials are recommended to confirm sensory neutrality and final attenuation.
- Distilled spirits: suitable for molasses, grain, fruit, and sugar-based mash fermentations when yeast nutrition must be standardized across raw material variability. The blend disperses before or during yeast pitching and should be mixed thoroughly to avoid localized concentration.
- Process development: useful for R&D teams comparing yeast strains, fermentation temperature profiles, and nutrient regimes. Lot data can be mapped into pilot-scale trials before plant adoption.
Storage and Handling
Store unopened 10 kg foil pouches in a dry, clean warehouse at 5–25°C, away from direct sunlight, steam lines, strong odors, acids, and oxidizing materials. DAP-containing nutrient blends are hygroscopic; reseal opened pouches immediately or transfer to a closed food-grade container with batch identification retained. Recommended shelf life is typically 24 months from manufacture when stored unopened under specified conditions.
Add only according to validated plant dosage procedures and local regulatory limits for the finished beverage type. Dissolve or pre-slurry in clean water or must where required by the process, then distribute evenly. Avoid inhalation of dust during charging; use standard powder-handling PPE and local ventilation where bulk dosing is performed.
Quality and Documentation
ArtemisYeast supplies ART-BW-039 for B2B fermentation use with lot traceability, specification review, and export documentation support. A certificate of analysis can report appearance, moisture, pH, nitrogen-related parameters, and microbiological indicators as applicable to the agreed specification. SDS, allergen statement, food-grade declaration, non-animal-origin statement, and GMO-status declaration can be provided on request.
Manufacturing and packing are managed under food-safety and quality systems aligned with HACCP principles. Documentation for ISO 22000, FSSC 22000, Halal, and Kosher may be available depending on the production lot and supply route; buyers should confirm requirements before purchase. Use the quality documentation page to review standard document types, or submit an RFQ through request a quote for specification matching and wholesale pricing on request.
Storage & Handling
